Peanut Butter Cookie Sandwiches

About a week ago, I decided to create something different.  I love sandwich cookies, and I found another great recipe from The Naturally Good Cook.  Peanut Butter sandwich cookies stuffed with a Nutella based cream.  I thought I would die of happiness.  I frequently make peanut butter and Nutella sandwiches when I'm out of conventional sandwich ingredients, so I was pleased to create a more dessert friendly application.

I set my oven for 350 degrees, and began to mix up the magic.

I beat together 1 1/2 sticks of unsalted butter with 3/4 cup of white and brown sugars, and 3/4 cup of peanut butter in my standing mixer.






I added 2 eggs one at a time.



Next I added 1/2 tsp of salt, 2 tsp of baking soda and 2 cups of flour.







Once the dough came together, I used a small scoop to create uniform balls of cookie on the baking sheets.  Using my fingers, I flattened each one.



They baked for 13 minutes, and were nice, uniform cookies, perfect for sandwiches.



As for the filling, I combined 2 cups of confectioner's sugar with 1 cup of Nutella in my standing mixer.  However, the creme was looking more like a powder, so I added some milk to smooth it out.





The resulting cookies were delicious.  My husband and I devoured them, and sadly, they did not last for long.  I hope you enjoyed this recipe.  It was a very good one, if you want to try it out.

Chocolate Maple Craisin Cookies (Or,Grown Up Boozy Cookies)

So, I went camping with my husband and some friends over the Memorial Day weekend, and decided to make a new kind of cookie.  We usually get properly sloshed on these trips, so I wanted to make an adult flavored cookie for us to enjoy.  Needless to say, these were enjoyed by us, and by my in-laws, and they were practically gone by the time we went home.  I got the recipe from The Naturally Good Cook.

In a small saucepan I combined 2 cups of Craisins with 1 cup of Brandy and let it come to boil on the stove.  After is boiled I set it aside for 30 minutes.





While that sat I combined 1 cup of butter with 1 cup of brown sugar, 1/2 cup of maple syrup in my standing mixer.




Once that came together I added 1 tsp of kosher salt, 2 tsp of cinnamon, 2 tsp of baking powder, 6 Tbsp of cocoa powder, and 3 cups of flour.







I added 12 oz of white chocolate chips and the drained craisins to the batter and mixed them up.



In a small bowl I mixed together a snickerdoodle mix of sugar and cinnamon.  I rolled each cookie ball in it and placed them on a cookie tray.



I baked them for 14 minutes at 350.



These have a very adult flavor, and probably wouldn't appeal to many kids.  That being said, they were really good.  They disappeared around the campfire!

Hiatus Broken

Well, it seems that I have not posted a thing since November of last year.  Now, don't get me wrong, I have been baking, since November, but it was a lot of things that I have found myself baking so often, that I never thought to take a picture, or really plan the process out.

Since I've excepted this job in Massachusetts, I've baked for faculty events, holiday parties, and for my gaming table, but it was all old hat.  Things I had done already for the blog.  That is until today.



Meet the Rainbow Trout.  Every Friday as I drive home form work, I hit a local seafood supplier, and every week they have had beautiful fresh trout.  They were literally staring me in the face every time I had gone in, so tonight, I felt adventurous.



I looked up different ways to prepare whole trout.  Many recipes used headless trout, or a cedar plank for grilling purposes.  Sadly we had to relieve ourselves of our grill (Think of the grilled desserts I could have blogged!), so grilling wasn't an option.  However, many also employed a spice rub to coat the inside of the fish.  I decided to give it a try.


In a small bowl, I combined 2 tsp of salt, 1 tsp of black pepper, 1 Tbsp of chili powder, and 1 tsp of Herbs de Provence (Sounds fancy, but it's really easy to make on your own).



I rinsed the trout, and set it on my baking sheet.  I coated the insides of both trout, and then stuffed them with lemon slices.



I made a side of roasted asparagus and red potatoes as well.




In a 350 degree oven, I baked all of the food stuffs for 20 minutes.



20 minutes later...



Oh man, you guys this was so tasty!  If you are feeling adventurous, I'd highly recommend trout.  And if the heads are too much for you, you can always ask your friendly fish monger to remove said head, of take it off yourself.  However, you'd be missing out on the cheek meat, which is super tasty.

I MOVED

Hello readers!  Sorry I disappeared these past few months, but some exciting things happened!

1. I GOT MARRIED


I got married in August, and it was pretty sweet.  We had a lot of fun, and so did our guests.





2. I went on my Honeymoon



We went to Hawaii for two weeks, and it was so awesome!




I didn't want to leave, but we had to for the third reason I've been MIA...


3. I got a new job in Massachusetts!

I got hired as a music teacher in Cape Cod, so we had to up and move pretty much immediately when we got back from our honeymoon.  So far it's been great, and I'm really enjoying the fact that I am using my degree :)


I will be back here baking again, and I've also started a tumblr as well, to post any fun adventures that might occur!
