Carbomb Cupcakes

While I was still an undergrad we celebrated St Patrick's Day in the usual ways: corned beef and cabbage, and lots of drinking.  One thing my friends wanted me to try was a drink called a Irish Carbomb.  This drink involves chugging a stout with a shot of Irish cream before that shot curdles.  This sounded terrible to me, so I made it into a cake instead.

This is a quick cake recipe.  Start off by mixing 3 cups of flour, with 2 cups of white sugar, 1/2 cup of baking cocoa, 1 tsp salt and 2 tsp baking soda.





Combine 2/3 cup vegetable or canola oil with 1 pint of stout.





Add wet to dry and mix until combined.




Bake for 25 minutes in a 350 degree oven.


Now for the icing.  I used a store bough icing, and I added 2 Tbsp of an Irish cream and mixed thoroughly.




Once the cupcakes are out of the oven and cooled, you can ice them.



And decorate them.
