Peanut Butter Cookie Sandwiches

About a week ago, I decided to create something different.  I love sandwich cookies, and I found another great recipe from The Naturally Good Cook.  Peanut Butter sandwich cookies stuffed with a Nutella based cream.  I thought I would die of happiness.  I frequently make peanut butter and Nutella sandwiches when I'm out of conventional sandwich ingredients, so I was pleased to create a more dessert friendly application.

I set my oven for 350 degrees, and began to mix up the magic.

I beat together 1 1/2 sticks of unsalted butter with 3/4 cup of white and brown sugars, and 3/4 cup of peanut butter in my standing mixer.






I added 2 eggs one at a time.



Next I added 1/2 tsp of salt, 2 tsp of baking soda and 2 cups of flour.







Once the dough came together, I used a small scoop to create uniform balls of cookie on the baking sheets.  Using my fingers, I flattened each one.



They baked for 13 minutes, and were nice, uniform cookies, perfect for sandwiches.



As for the filling, I combined 2 cups of confectioner's sugar with 1 cup of Nutella in my standing mixer.  However, the creme was looking more like a powder, so I added some milk to smooth it out.





The resulting cookies were delicious.  My husband and I devoured them, and sadly, they did not last for long.  I hope you enjoyed this recipe.  It was a very good one, if you want to try it out.
