Enter the Vegan Sister

Christmas time is full of deserts.  Desserts constructed from fats, like butter, cream, and eggs.  No place for a vegan to be it seems.  However, my sister Nyssa is a vegan, and she was able to create delectable bad for you, "oh god I gained a pant size" desserts that were vegan.

In fact she took something very traditional, and made it vegan: The Buche de Noel.

That chocolatey spong cake, that thick buttercream, the chocolate Shavings.  How oh how did my sister do it?


By substituting some of the animal made fats and emulsifiers with vegetal ones, and some molecular gastronomy.

The only thing that needed to be replaced was the eggs.  She used an egg replacer that can be found in the organic section of the supermarket.  Once baked and cooled, she rolled it up.


Then it was time to make the buttercream.  Again, substituting milk and butter with a vegan margarine and soy milk, Nyssa was able to make a delicious vanilla buttercream!







After slathering it on the cake and rolling it up, she used the remaining and flavored it with melted dark chocolate, and hazelnut liqueur.  Top with toasted hazelnuts, and it's done.





And oh man, was it good!
